Braised fish production method

Fish, ginger, onion, garlic, chili, light soy sauce, dark soy salt

Steps/methods

Shred the ginger, slice the garlic, slice the spring onion and dice the chilli.

Fish belly open, wash. Make a cross knife on the fish and marinate both sides with a little salt, light soy sauce and some shredded ginger for one hour.

Heat oil in a wok, add shredded ginger, sliced garlic, scallion and chilli until fragrant.

Add fish and fry lightly.

Fry until both sides are lightly browned. Pour in 1 tablespoon dark soy sauce and 1 tablespoon light soy sauce and some water. Cover and cook.

Cook until the water is almost dry, add the scallions and simmer.

Shovel out and serve.
